Quest for the perfect chocolate chip cookie
Today is Cinco de Mayo, and I didn’t eat any Mexican food, which is shocking because I love Mexican food and eat it at least a couple of times every week.
But I made cookies. This time it was the unhealthy but tasty kind.
And tasty they were. Crunchy on the edges and chewy in the middle, just like the recipe promised. I followed it precisely but dropped the walnuts. I never like nuts in cookies. They just seem to get in the way.
Lately, I’ve made it a rule to use parchment paper always. I also used a small ice-cream scoop to measure out consistently sized dough balls. They didn’t turn out perfectly round but who cares?

A batch is baking as I am writing this. The recipe is going to yield between 4 to 5 dozen cookies. I absolutely love the aroma in the kitchen right now. The smell of fresh cookies, the melted chocolate chips and the vanilla… I think I’ll be baking these regularly now!
This is my second attempt at chocolate chip cookies, and it has set the bar high. It’s gonna be tough to beat this one! I am going to print out the recipe and put it on the fridge.
